<p>The mille-feuille (literally &quot;a thousand sheets&quot;), also known as a Napoleon, is a classic French pastry traditionally composed of three layers of puff pastry (pâte feuilletée) alternating with two layers of pastry cream (crème pâtissière).  Angelina’s version features pâte feuilletée caramélisée (caramelized puff pastry) layered with a crème légère à la vanille (light vanilla cream).<br />

Angelina, at 226 Rue de Rivoli,  is a historic Parisian tea house founded in 1903 by Austrian confectioner Antoine Rumpelmayer, who named it after his daughter-in-law.  It quickly became a favorite of Coco Chanel and Marcel Proust, celebrated for its Belle Époque interior by Édouard-Jean Niermans. Its signature offerings—the famously rich “L’Africain” hot chocolate and the Mont Blanc pastry—have become Parisian icons. Though now an international brand, the original salon remains a beloved spot for a taste of classic Parisian elegance.</p>

<p>For kicks and grins I took a Takumar 28mm f/3.5 SMC (version 2) lens along with me and shot it opposite a new Sigma 24mm f/3.5 DG DN.  Enabling the kinds of software interventions the Sigma and other modern lenses require on the Takumar shows me just how good Old Lenses can be.  In this case the Takumar has less chromatic aberration than the Sigma 24mm and has the same level of &quot;sharpness.&quot;  Other differences are very subtle, which means the Takumar is eminently usable.</p>
